Country Critters Farm, LLC is a small family run farm located in Winchester, NH that produces fresh farmstead goat cheese and artisan fresh cow cheese.
It is a soft spreadable Robiola style cheese that we offer plain or herbed with an assortment of locally purchased herb mixes. When we install our aging room, we will offer aged cheeses as well. We also offer bottled raw cow and goat milk. Yogurt, made from raw milk, is available upon request.
Our twenty two Alpine Nubian cross goats are raised on pasture and are protected by their faithful guardians, Rose and Emma our two Great Pyrenees dogs. We are now building a herd of cows to offer our cow cheese from our own pastured cows as well as our goats.
Robiola style cheese was originally made 200 years ago in the Langhe Hills of Northern Italy and still is today. We make our fresh cheese with vegetable rennet and pasteurized goat milk from April until around October. We make our same great cheese throughout the winter months with cows milk that is purchased locally for now. Our cheese has a smooth texture that is achieved by carefully hand ladling it into individual molds. It is used on bagels, crackers, sandwiches and in salads amongst other uses, it also makes a wonderful cheese cake. Our cheese received a silver and a bronze metal at the 2011 Big E Cheese Competition.
