Blueberry picking is in full swing in NH! Below is a recipe for you to use those fresh blueberries in!
Rattlesnake Island Blueberry Cake from Jeannie Leach; Rattlesnake Island.
This dessert shows up at every Leach family get-together in the summer. It reflects Mary Leach's Eastport, Maine, background, and can feed a crowd. She and Chuck inspired such love for Lake Winnipesaukee in their family that everyone comes back year after year, no matter how far away life takes them. There is no place the three generations would rather be than at the lake.
1½ cups blueberries
2 eggs, separated
1 cup sugar, separated
½ cup butter or margarine, softened
1 teaspoon vanilla
1½ cups flour
1 teaspoon baking powder
¼ teaspoon salt
⅓ cup milk
Preheat oven to 350°F. Grease an 8x8-inch baking pan.
Use a bit of sugar and flour called for in recipe and gently shake into berries.
Let stand about ten minutes. This helps to keep them from sinking.
Beat egg whites and ¼ cup of sugar until stiff.
Cream together butter, vanilla and remaining sugar. Gradually add unbeaten egg yolks. Beat till light and creamy.
Sift together flour, baking powder and salt.
Blend dry ingredients into batter, alternately with milk.
Fold in egg whites. Fold in blueberries.
Turn batter into the prepared pan. Sprinkle top of batter lightly with additional sugar.
Bake 350°F. for approximately 50 minutes.
Note: This recipe can be doubled, using a large 9x13-inch pan.

August 25th there will be a NH Growers Dinner to benefit the NH Food Bank. This event will be held at the NH Food Bank's new warehouse facilities in Manchester. Area chefs from favorite restaurants will be on-site to showcase their specialties using local foods. Find details here.
